  • 6-8 onions, peeled and sliced into rings

  • 1/2 cup water

  • 1 cup vinegar

  • 5 bay leaves

  • 1 tsp peppercorns

  • 1 tsp coriander seeds

  • 1/2 cup sugar

  • Salt, to taste

  • 2 tbsp roasted masala, curry powder, or pickled fish masala

  • 2 tsp turmeric

  • Cake flour, for coating the fish

  • Oil, for frying the fish

  • 1 heaped tbsp cornflour mixed with 1 tbsp cold water

  • 1-2 tbsp fine apricot jam (optional)


METHOD:

  1. Season the fish with salt and turmeric, then coat lightly with cake flour. Fry in shallow oil for about 2 minutes on each side until golden brown. Set aside in a large bowl.

  2. In a large pot over high heat, combine water, vinegar, bay leaves, peppercorns, coriander seeds, turmeric, masala, and a heaped teaspoon of salt. Bring to a boil.

  3. Add the sliced onions and half a cup of sugar. Cook on medium heat for 8 minutes until the flavors have infused and onions are slightly softened.

  4. Stir in the cornflour mixture until the sauce thickens. Optionally, add apricot jam.

  5. Remove from heat and pour the mixture over the fish in the bowl. Allow to cool, then cover and refrigerate

    until ready to serve.

02. Hot Cross Buns:

INGREDIENTS:

  • 5 cups cake flour or strong bread flour

  • 11⁄2 packets instant yeast (15 grams)

  • 1⁄2 teaspoon salt

  • 6 tablespoons caster sugar

  • 21⁄2 teaspoons mixed spice

  • 21⁄2 teaspoons fine cinnamon

  • 1⁄2 teaspoon nutmeg

  • 2 teaspoons fine ginger (or grated fresh ginger)

  • 11⁄2 cups seedless raisins

  • 300 ml lukewarm milk

  • 70 grams melted butter

  • 2 extra large eggs, whisked

     

METHOD:

  1. In a bowl, combine all dry ingredients and stir until mixed. Add wet ingredients and mix with a wooden spoon until well combined.

  2. Transfer dough to a floured surface and knead for 10 minutes. Place in a lightly oiled bowl, cover, and let rise for 90 minutes.

  3. After rising, punch down the dough and shape into round balls. Place them 2 cm apart on a baking tray lined with parchment paper. Cover with a tea towel and let rise again for 35 minutes.

  4. Preheat the oven to 190°C.

  5. Mix half a cup of cake flour with enough water to make a thick paste. Spoon this paste into a piping bag with

    a thin nozzle or a plastic bag with a small hole cut at the tip. Pipe crosses onto each bun.

  6. Bake in the preheated oven for 25-30 minutes or until golden brown.

  7. While still hot, brush with a simple sugar syrup made by stirring 4-5 tablespoons of sugar into a quarter cup

    of boiling water until dissolved. Optionally, you can stir in a teaspoon of apricot jam for flavor.

  8. Enjoy your freshly baked hot cross buns!

Tips:

  • Avoid adding extra flour to the dough to prevent dense buns.

  • Enhance the flavor by adding orange zest or freshly grated ginger.

  • Store leftovers in an airtight container in the fridge and reheat in the microwave for a fresh taste
